Chopping Boards & Prep Tools — Common Questions

What are chopping boards and prep tools in a commercial kitchen context?+

Chopping boards and prep tools cover everything your team uses to prepare ingredients before cooking begins. That includes cutting boards in various materials and sizes, sieves and strainers for wet and dry ingredients, automatic sieve baskets for food processors, board sterilisers for hygiene compliance, and a wide range of hand tools built for daily commercial use. They are the foundation of a well-organised prep station.

What types of chopping boards and prep tools does Chefs Depot stock?+

The range spans colour-coded plastic cutting boards, wooden presentation boards, fine and coarse mesh sieves, perforated baskets for automatic sieves, board steriliser cabinets, funnels and a broad selection of bench prep tools. Brands available include Hygiplas, Trenton, Vogue, Matfer Bourgeat and more. With over 400 products in this category, your team is likely to find exactly what the prep station needs.

Should I buy plastic or wooden chopping boards for my kitchen?+

Plastic boards are the go-to for most commercial kitchens because they are easy to sanitise and colour-coding helps prevent cross-contamination between proteins, produce and allergens. Wooden boards suit front-of-house presentation and serving rather than heavy prep work. For a busy cafe or restaurant, a set of colour-coded plastic boards from Hygiplas or Vogue will do the heavy lifting, while a timber board like the Olympia acacia round works well for cheese or charcuterie service.

How do I choose the right size chopping board for my bench space?+

Measure your available bench run first, then think about the largest item your team regularly breaks down. A small board slows prep and creates a safety risk when trimming large cuts. Most kitchens find a mid-to-large board covers the majority of tasks, with a smaller board kept handy for garnish and fine work. Check the listed dimensions on each product before you buy to make sure it fits your bench and storage rack.

What mesh size should I choose for a commercial sieve?+

Mesh size depends entirely on what you are passing through the sieve. Fine meshes suit stocks, sauces and custards where you want a smooth result. Medium meshes handle dusting flour or sifting dry ingredients. Coarser perforated baskets, like those in the Robot Coupe range stocked here, are designed for automatic sieve machines processing purees and soft foods. Match the mesh to the task rather than buying a single size and trying to use it for everything.

Do board steriliser cabinets require a plumbed connection to install?+

Requirements vary by model, so always check the individual product specification before purchasing. Some units are self-contained and simply need a power point, while others may require drainage or a water connection. The FED board steriliser listed in this range gives you a sense of the footprint involved — measure your designated space carefully, including clearance above and to the sides, before you order.

How should colour-coded chopping boards be cleaned and maintained?+

Scrub boards thoroughly after each use with hot water and an appropriate food-safe detergent, then sanitise according to your kitchen's food safety plan. Avoid soaking boards for extended periods as this can cause warping. Deep score marks harbour bacteria and are a sign the board needs replacing. Running boards through a commercial dishwasher is fine for most plastic boards, but check the manufacturer's guidance on the individual product page to confirm heat tolerance.

How do I keep sieves and perforated baskets in good working condition?+

Rinse sieves immediately after use to stop food particles drying into the mesh, which makes them far harder to clean. Fine mesh sieves benefit from a soft brush rather than a scouring pad, which can distort the weave over time. Perforated baskets for automatic sieve machines should be inspected regularly for bent or damaged perforations. Store sieves hanging or flat rather than stacked under heavy items to protect the mesh frame.

Can I buy prep tools and chopping boards together in one order?+

Yes — everything in this category ships together in a single order from Chefs Depot. There is no need to split your prep station purchase across multiple suppliers. Add boards, sieves, baskets and any other prep tools to your cart and we'll dispatch them together. Australia-wide delivery means your kitchen gets what it needs regardless of where you are located.

How much should I budget for commercial chopping boards and prep tools?+

Pricing across this range varies widely depending on the product type and brand. A single colour-coded cutting board sits at the lower end of the scale, while board steriliser cabinets and automatic sieve machines represent a larger outlay. Brands like Hygiplas and Trenton offer solid trade value, while Matfer Bourgeat sits at the premium end. Members save off RRP across the full range, which adds up quickly when you are kitting out a whole prep section.
